KOREAN TOFU SOUP (SOONDUBU JJIGAE) RECIPE

Soondubu Jjigae (Korean Tofu Soup) is a delicious, comforting dish featuring soft tofu, vegetables, sometimes meat or seafood, and a spicy, flavorful broth. Here's a classic recipe for you to try: 

For the Broth: – 2 cups anchovy or vegetable broth (or water) – 1 tablespoon gochugaru (Korean red chili pepper flakes) – 1 tablespoon gochujang (Korean red chili paste) – 1 tablespoon soy sauce – 1 teaspoon sesame oil – 1 teaspoon sugar

– 2 cloves garlic, minced – 1 small onion, sliced – 1 zucchini, halved and sliced – 1 cup kimchi, chopped

For the Soup: – 1 pack (300-400 grams) of soft tofu (soondubu) – 1/4 pound of pork belly, thinly sliced (or you can use beef, chicken, seafood, or make it vegetarian) – 1 egg – 1-2 green onions, chopped

– 1 chili pepper, sliced (optional, for extra heat) – Salt and pepper to taste

Instructions: 1. Prepare the Broth:In a pot, combine the anchovy or vegetable broth, gochugaru, gochujang, soy sauce, sesame oil, sugar, garlic, onion, zucchini, and kimchi.

Bring the mixture to a boil, then reduce the heat and let it simmer for about 10 minutes to allow the flavors to meld together. 

Cook the Meat (if using): – In a separate skillet, cook the pork belly or other meat until it's fully cooked. If you're using seafood, you can add it directly to the broth later.

Add the Tofu: – Carefully cut the soft tofu into large chunks and add it to the simmering broth. Be gentle to avoid breaking the tofu too much. – Let the tofu heat through for about 5 minutes.

Combine and Simmer: – Add the cooked meat to the pot (if using). If using seafood, add it now and let it cook through for a few minutes. – Adjust the seasoning with salt and pepper to taste.

Add the Egg: – Crack an egg directly into the soup and let it poach in the hot broth for a couple of minutes. You can also whisk the egg before adding it if you prefer a more even texture.

Garnish and Serve: – Once the egg is cooked to your liking, remove the soup from heat. – Garnish with chopped green onions and sliced chili pepper if using.
